- Sauté chopped tomatoes with salad onions and smoked paprika in a splash of oil for a couple of minutes.
- Add the drained black beans, stir and simmer until soft and bubbling (about 5 mins).
- Smash the avocado with a fork, add a squeeze of lime juice (to stop it going brown).
- Spoon the smokey bean mix & smashed avo on/in to the tacos, top with crumbled feta and chopped coriander then bejewel with pomegranate seeds!
Tip: Add thinly sliced cabbage for extra crunch
