Mexican Smokey Tacos with black beans, smashed avo & feta


  • 10 plain tacos
  • 2 x 400g can black beans, drained & rinsed
  • 4 large ripe tomatoes
  • 4 salad onions
  • 1 tsp smoked paprika
  • 50g feta cheese or similar
  • 2 ripe avocados
  • 1 lime
  • Pomegranate seeds & coriander to serve


  1. Sauté chopped tomatoes with salad onions and smoked paprika in a splash of oil for a couple of minutes.
  2. Add the drained black beans, stir and simmer until soft and bubbling (about 5 mins).
  3. Smash the avocado with a fork, add a squeeze of lime juice (to stop it going brown).
  4. Spoon the smokey bean mix & smashed avo on/in to the tacos, top with crumbled feta and chopped coriander then bejewel with pomegranate seeds!

Tip: Add thinly sliced cabbage for extra crunch
