Chicken Tikka & Roasted Vegetable Topped Naan

Ingredients:

  • Mission Naan
  • 60g Hot tikka chicken (marinade in tikka paste then roast in hot oven until cooked through)
  • 100g Roasted peppers & red onions
  • Fresh coriander
  • 12g Spinach leaves
  • Fresh chillies
  • Butternut squash
  • Cumin
  • Chilli

Method

  1. For the spicy squash hummus – roast the squash with the cumin and chilli until soft. Blitz into a puree and season with salt & pepper
  2. Warm the naan in a dry frying pan, oven or grill for thirty seconds on each side
  3. Spread the spicy squash hummus over the base and add the spinach and coriander leaves
  4. Top with the cooked tikka pieces and roasted vegetables
