Spicy Beef & Spinach Tortilla Pinwheels

Ingredients:

  • 1 x 20cm Spinach Tortillas
  • 80g Minced Beef
  • 5g Italian Herb seasoning
  • 2g Chilli Powder
  • 100gTomato & Basil Sauce
  • 35g Red Pesto
  • 100g Béchamel Sauce
  • 35g Grated Cheese

Method

  1. Fry minced beef in a little oil for 5 mins
  2. Add Italian herb seasoning & chilli powder to taste & fry for 10 mins
  3. Add tomato & basil sauce & the red pesto & cook until the liquid has reduced
  4. Spread the spicy beef all over the tortillas in a thin layer.  Roll up like a Swiss roll
  5. Spread a layer of tomato & basil sauce over the base of individual oven proof dishes
  6. Cut each roll into 8 pinwheels & place cut face up in the dishes (8 pinwheels per portion)
  7. Cover the pinwheels with Béchamel sauce
  8. Sprinkle with grated cheese & bake until piping hot & bubbly.
