Welsh Rarebit Topped Pitta With Fried Eggs

Cooking time: 15 minutes
Ingredients
- 5 Mission Wheat and White Pittas
- 1kg [35oz] mature cheddar cheese, grated
- 10 tsp English mustard powder
- dash of bitter beer
- 15 egg yolks
- salt
- pepper
- 5 beef tomatoes each sliced into 6
- 10 fried eggs
Method
- Slice open pittas lengthways
- Preheat the grill and toast pitta on one side only Mix the cheese, beer and egg yolks together
- Spread onto the uncooked side of the pitta
- Place on the grill and cook until lightly browned
- Top each with 3 slices of tomato and a fried egg.
- Serve
